Hidden Kitchens gathers stories about the less visible cooking traditions of Texas, the homemade meals and makeshift cooking spaces that rarely reach a restaurant guide. Its subjects range from ice houses and roadside chili stands to kitchens in space and in car washes, and they include the origins of some well-known foods and drinks. The book grew out of a public radio series and the many listeners who got in touch to share their own memories of Texas food. Alongside the stories, it offers recipes that come from the people in them, from pies and barbecue sauces to a stew that one family swears by as a tonic. The result is a mix of oral history and home cooking, told in the voices of the people who made the food.
